Caciocavallo palermitano is a cheese with a very ancient tradition. It takes its name from the typical way in which the cheese paste was placed on the reeds during processing, before taking the parallelepiped shape, it is produced in the areas surrounding Palermo.
Aged caciocavallo is a cheese made from whole cow's milk.
Caciocavallo has a straw yellow colour, a compact, hard texture, a full and very persistent taste on the palate, and an edible outer crust.
Maturing period: 12 months.
Production area Godrano (PA).
Ingredients: Cow's MILK, rennet, salt.
Origin of milk: Italy.
