The Salami of Black Pig with Wild Fennel has a deep imprint with the territory in which it is born, starting from the choice of meats. It finds a strong bond with the land for the presence of Wild Fennel.
An aromatic herb with a typical, pungent scent, which grows spontaneously in large bushes with showy yellow flowers in uncultivated countryside and whose dried seeds often appear in typical recipes of our region and which we find here in a winning combination.

The Chiaramontano Salumificio
“Il Chiaramontano” was born in 1994 in the small village of Chiaramonte Gulfi, where Massimiliano Castro decided to open a small shop selling fresh local meats.
His great passion and territorial ties combined with continuous studies and research into innovative methods for preserving meat led him, after only a few years, to the production of cured meats with original ingredients and particular flavours, such as Ragusano donkey salami or Sicilian black pig cured meats.
