This sausage is characterised by its traditional horseshoe shape, and the presence of chilli pepper which enhances its flavour.
When cut, the product appears deep red, interspersed with white fat, powdery on the outside, a characteristic that underlines the artisanal nature of these products.
Soft when cut and with a typical flavour, intense but never excessively salty.

The Chiaramontano Salumificio

“Il Chiaramontano” was born in 1994 in the small village of Chiaramonte Gulfi, where Massimiliano Castro decided to open a small shop selling fresh local meats.
His great passion and territorial ties combined with continuous studies and research into innovative methods for preserving meat led him, after only a few years, to the production of cured meats with original ingredients and particular flavours, such as Ragusano donkey salami or Sicilian black pig cured meats.
